Cycle 2 Day 15

I decided to try the cauliflower pizza again. This time I used a pizza pan that has little holes in it. I was hoping the crust would get crispy and hold together so you could pick the slice up and eat it. I didn't have any luck...it was better then last time...and it tasted YUMMY...I feel like I am being so bad when I eat this...I am using reduced fat cheese....I just don't like fat free cheese...so I guess I am cheating a little. I took pictures of my process this time.

I am going to try this method next time....for ricing the cauliflower
Hint: (From the 17 DD Facebook Page)
Re: soggy crust - use fresh, not frozen cauliflower, grate it into a fry pan over med-low heat to pull out moisture and create the "cauliflower rice" base. Then bake this in the oven til it's crunchy. Then add the toppings and run them under the broiler just long enough to melt the cheese.

How much cauliflower you use really depends on the size of your pizza pan and how thick you want the crust. I use 1/2 head but I bake in a 9" square glass dish (deep dish style) since that's what fits in my convection oven.

Cycle 2 Day 11

I also jumped on the scale again today...(I think I was worried about eating out) I lost another pound. I am now down 15.5 lbs.

Another day of shopping, this time with hubby. I had a big breakfast and it was very filling, and I thought I would be home to eat something before 2...well, that didn't happen. So I only had one serving of fruit today.
Breakfast: Oatmeal with strawberries with some Truvia on the top and green tea

Lunch: I did eat a Mike's Power Cookie when I did get home..after 2..but I was sooooooo hungry.

Dinner: Stir-Fry with shrimp and a slice of tomato with some cottage cheese.

Snack: Yogurt with some flax-seed stirred in...and some EVVO. I am hoping the flax-seed will help with my hot-flashes. Over all this diet had made me feel so much better. My joints don't hurt like they used to. And my intake of Advil is WAY DOWN.

Cycle 2 Day 10

Today I will be shopping all day. I am going to go prepared so I am not tempted to stop and grab some fast food. I eat breakfast and green tea. Packed some grapes and a orange along with some yogurt.

Breakfast: Grapes, Mike's Power Cookie, Yogurt and Green Tea

Lunch: The rest of the grapes from breakfast an orange and another yogurt

Mike and I decided to go out to eat. This is the first time eating out...that alone is a real achievement, because we used to eat out a LOT! We had a gift card for Applebee's and decided we would give it a try. We both had a cup of soup. I got 1/2 a spinach shrimp salad and he got a chicken salad with fruit. I am sure that the dressing was not 17 Day Diet approved...but we did the best we could. I left feeling satisfied  and not over stuffed. We are learning...we don't have to pig out to make it feel like a treat.

Dinner: 1/2 Spinach Salad with shrimp and a cup of tomato basil soup.(I took the cheese off of my soup)

Cycle 2 Day 9

Weigh in today....I am down 14.5 lbs. and Mike is down 18 lbs. I knew the weight loss would slow down in this cycle so I am not discouraged at all. I am looking forward to this weekend. It is actually warming up to the 40's here. Time to get walking outside and get some Vitamin D and get the heart rate up.

Breakfast: Oatmeal with cinnamon and come cranberries added to the top for a little sweetness. Yogurt with my EVOO added to it.

Lunch: Red Grapes and another yogurt

Dinner: I am going to stop at McD's and get a salad on the way to work.(I am sure there are a few things on this salad that are not OK...but a few things will not hurt) And Green Tea...I really like the flavored ones. Who knew? LOL

Cycle 2 Day 8

I was tested today...and I passed with flying colors. When I got into work I placed my dinner in the refrigerator in the break room and look what was on the table........

Then I went to my department and a lady there had birthday treats for all of us I walked by them at least 20 times...I was so tempted...but I kept saying...YOU DON'T NEED THAT!!! I am so proud of myself. When it is my birthday...I am bringing FRUIT....LOL

Breakfast: 2 eggs omelet topped with salsa- strawberries with a few grapes and of course my green tea

Lunch: Grapes and Yogurt

Dinner: Salad with chicken and cottage cheese

Cycle 2 Day 7

I love my oatmeal mornings.

Breakfast: Oatmeal with blueberries and Mike's Power Cookie with cranberry flavored green tea

Lunch: Pear and Yogurt

Dinner: Sweet Potatoes, Green Beans and some kind of beef...(I didn't eat that..I am not a real red meat eater)

Cycle 2 Day 6

Worked two 12 hr shifts back to back with no day off..(worked the weekend also)...so my meals are less creative and more grab and go. Even with that...I have managed to stay on the plan
Breakfast: Plum with vanilla yogurt
Lunch: Apple with yogurt
DInner: Turkey and cauliflower left over from two nights ago.

Monday, March 7, 2011

Cycle 2 Day 5

Started my day off with a little oatmeal with a little peache added to it. Had the rest of the peach on the side. I also had peach green tea...gotta say...I plan on having a peachy kind of day...as Charlie Sheen would say...WINNING!!!!
I am on second shift this week...and this Cycle will really require some planning. I am used to having left overs from the night before for work. But that will not work with the C1 C2 back and forth. To solve that problem I saved a meal from Sat night...(the stir fry with rice to start my week) So if hubby makes something every night I will always have a meal waiting for me.

Lunch: Apple with Dr Mike's Power Cookie

Dinner:
I am having the stir fry with rice and cottage cheese.

Snack: Yogurt

Cycle 2 Day 4

Dr Mike's Cookies
I made these today. I didn't have vegetable spray..so I used olive oil spray..and I had the rack in the oven set in the middle. They baked to fast...they got a little more brown then I would have liked and they didn't even bake 15 minutes. I am going to correct these issues on the next batch and see if I have better results. Even with the problems I had, I liked the taste and I feel like I am getting a treat. It will be great when I am on days...something to grab for breakfast when I am in a hurry.

I had a hard boiled egg and a few slices of turkey when I came home from work this morning. I also had to eat one of the cookies when I made them when I got up. This is the day I switch over shifts, so it is a little hard to fit all my food into today...but I am not going to worry about it.

I also purchased some flavored green tea...today I tried the peach green tea...AWESOME...I didn't even need to add Truvia this time.

Our all white dinner...lucky I had a colorful plate.

Dinner: Cauliflower, cottage cheese and turkey tenderloin. It tasted better then it looked!

Snack: Yogurt

I went shopping this morning when I got out of work for all the ingredents for the power cookies. I hope to make them this weekend. I am picking up some OT...so I will play it by ear.

Cycle 2 Day 1

Well, we made it. The first 17 days are history. I am down 12 lbs and Mike 16.5 lbs. I know the next 17 days the weight will not come off as fast as it did in the first cycle. But I am so looking forward to the new items that we can add back in for cycle 2. I am going to focus my attention to portion control and not the scale in this cycle.

On my way home from working the night shift I stopped at McD's and picked up some oatmeal. OMG...oatmeal never tasted so good. YUM YUM...I didn't add all the raisins, because I was not sure about them. I did add all the apples. When I got done...I was so satisfied.

We had our first potato..we topped it off with out cottage cheese, chicken made in the Nuwave Oven with a little BBQ sauce on it. Brussel Sprouts and of course my green tea!!

I am going to take strawberries and a yogurt for my first break at work and then a orange.

Feeling great...and I actually have energy..and that is saying a lot when I am working nights this week. I actually had to move my belt over one hole because my pants felt lose!! Can I get a Amen Sister???
