Weigh-In
Weigh-In
Down 30 lbs...this is the most I have ever lost any diet in all the many diets I have tried. It is also the first diet I can see doing for the rest of my life. Learning to eat to live...instead of living to eat.

Kale Chips
I made the Kale Chips today. First batch I used to much salt...the second batch turned out GREAT! They really do sound and feel like you are eating potato chips.

Dinner; Cauliflower Pizza
Ok, they say third times a charm...so with that in mind...it's pizza for dinner. I am on second shift next week so I wanted to make a family size pizza, so there would be left-overs to take to work.
Here is the recipe I used:
1 large head of raw cauliflower..I used a food processor to rice it.
3 eggs beaten
2 cups FF or Low Fat Mozzarella Cheese
2 Tablespoons Chef Paul Prudhomme's Magic Seasoning Blends ~ Pizza & Pasta Magic
Pizza Sauce or Marinara Sauce
FF or Low Fat Mozzarella Cheese
Toppings of your choice
(I added broccoli, onions and peppers this time...and decided I would microwave these for about 2 minutes to start the cooking process before placing them on the pizza, or they don't tend to get done enough)
Pre-heat oven 4:25
Spray cookie sheet with non-stick spray
I cooked the riced cauliflower in a pan on the stove. I think it worked this way better because it did not add any moisture to it. In a large bowl add cauliflower, mozzarella cheese and beaten eggs and spice. Mix and then press evenly into the pan. Not to thick.
Bake 17-22 Minutes..check offen
Remove pan from the oven add sauce and toppings...return to the oven and bake until cheese melts.

Breakfast in bed....life is good...just wish the weather was. At least I have my appetite back...still don't feel 100%, but getting there.
April 16th and it is raining/snowing outside...what else is there to do..but to go shopping. We decided to check out the "Bulk Foods" store on Highway 15.
What a awesome place. Look at all those colorful baking sugars & sprinkles, and candy as far as the eye can see. Well, we didn't come for that kind of stuff...but it is eye candy for the organizational freak in me.
We also decided to give the Baked Parmesan Onion Rings a try today.
Breakfast: Scrambled Egg with mushrooms, onions, peppers, Green Tea
Lunch: Sweet Potato Chips
Dinner: Salad with Chicken, Veggies, Veggie Cheese, and onion rings, Green Tea
Product Review: Marie's Yogurt Mustard Dressing
This dressing as a nice flavor and a little tangy at the same time. I just could not handle the water downed FF dressing anymore. I now place the dressing on the side and dip each fork full in the dressing. I use a lot less and get even more flavor from each bite.
It is our choices that show what we truly are, far more than our abilities.

They did have a nice selection of natural peanut butter. I picked up some almond butter....and that is the only thing listed in the ingredients.
They did have a lot of no-no's, but instead of those...we decided to grab a small bag of Sweet Potato Chips and be just a little naughty.
I also picked up some flavored sea salt, mango green tea, whole wheat pasta, rice and popcorn. We also decided to give the Baked Parmesan Onion Rings a try today.
I really enjoyed them. I didn't even miss the ketchup. We will be making these again.

Still, not feeling well. I did drink my lemon water this mornning and a Green Tea...that was all I could handle.
I did stop and get a McD's S/F Vanilla Ice Coffee....I know its not allowed on Cycle 1...but I thought at least it would be some calories and it would feel good on my throat. I promised myself I would eat dinner, even if I didn't have a appetite.
Dinner: Chicken Breast, Corn (not allowed in Cycle 1) with that Grill-mate seasoning on it...GREAT... and a tomato with some truvia on it..because this time of year tomatoes are not very sweet. Green Tea

I still don't feel well. I have no appetite, but I don't want my body to go into starvation mode, so I am forcing myself to eat something. The hot Green Tea feels good on my sore throat. At least my body aches are not as bad as this morning...now I just need my sore throat to get better.

Product Review: Grill Mates® Smokehouse Maple Seasoning
If you want to add flavor to your fish...just shake on some of this seasoning. Instant flavor! We have had it on Salmon and Tilapia so far. Great on both

I have not been sick all winter and I woke up yesterday with a little sore throat. Today it is really bad...there is no way I can drink lemon water...I think that would hurt to much. I don't even feel like eating. I did have a green tea when I got up...and later made a smoothie. That seem to help a little. Going back to bad hoping it will pass soon.

Breakfast: Yogurt...that is all I had time for. Going to list my Moped on Craigslist today...with gas prices approaching $4.00 a gallon it should go right away. Had to go to my brothers to take some pics of things he wants sold also.
Lunch: Left-over Turkey from last night heated then mixed in some egg beaters. Topped it off with salsa and cottage cheese. It did not look to pretty...but it tasted great!
Dinner: Spinach Salad with Chicken and assorted Veggies. FF Ranch Peppercorn Dressing
Update....sold the Moped by late afternoon!!! Whohooo!! Thank-you gas prices!
If you don't make changes today... you'll be the same person tomorrow.

Breakfast: Heading down to Milwaukee for a visit with Amy and her boyfriend, so that means breakfast on the go! Red Grapes and Yogurt
Lunch: In Milwaukee at the Chancery
Tilapia with roasted veggies over Romain lettuce. AWESOME!!!! Mike had a salad with raspberry marinated chicken with mandarin oranges in it. I never thought of roasted veggies and putting them on a bed of Romain lettuce. It was VERY GOOD...you really don't even need dressing. You get so much flavor from the roasted veggies.
Stopped at Cabela's on the way home. I am so glad they didn't have the fresh kettle corn in the front of the store going. I don't think I could have said no to that.
Dinner: Taco Salad made with Turkey, RF Cheese, Salsa and Cottage Cheese...This salad is one of my favorites! Green Tea

Mike made dinner tonight....I think he forgot what we could have on Cycle #1. He made sauteed veggies with zucchini in it and Haddock, which are not allowed. But if that is the worse thing we do...I can live with it.We usually go out for the Friday Fish Fry...so I think it was a good choice to eat at home.
Breakfast: Grapes and Strawberries, Yogurt and a Green Tea
Lunch: Same Salad as last night...just smaller, Carrots and a Green Tea

Something New!
Look what I found at a Thrift store...Brand new Salad Spinner...I always wanted one...and at $4.99 I thought perfect. I plan on planting a lot of greens in the garden this year...this will really come in handy then.
Cauliflower Popcorn
I thought I would give this a try. Everyone on the 17 DD Facebook PAGE that has tried this...LOVES IT
Here is the recipe:
Cauliflower Popcorn
Ready to go in the oven...now I just have to wait for an hour to taste it.
TICK TICK TICK.....and here it is an hour later...one hint...make sure your oven is clean before doing this...or your smoke alarm will go off. But I have to say..I AM IN LOVE with this stuff. I ate half the head and packed the rest for my lunch tomorrow. But to tell you the truth..I seriously could have eaten the whole thing. I think kids would even like these. I think this would be a great late night snack or late afternoon...when you just have to eat something.

Dinner:
Well, we made to the end of cycle 3. I lost 23.5lbs and Mike lost 24 lbs. We decided to go out to eat and get it out of system before starting over. We both like Chili's Chicken Tenders and of course they have the two for $20 deal and that comes with a appetizer. We got the cheesy fries. I could only eat half my tenders and my corn on the cob with some of my fries. We are now ready to get back on track and actually looking forward to Cycle 1 again. I want to lose another 20 lbs, so I am hoping I can do that with the next 3 cycles, then move to Cycle 4 and my new lifestyle changes!

Breakfast: Did not have time for breakfast, but did get my lemon water in before my sister came to pick me up for some thrifty and antique shopping today.
Lunch: Grilled chicken honey mustard warp and I did sneak a few of her fries also.
Dinner: Mike and I went to the Glass Nickle for dinner. I had half of a Spinach Salad and we shared a half of veggie sandwich on whole wheat bread. Very good and it felt good going out to eat and feeling like I stayed on my weight loss journey.
