Recipe Make-over

Apple Pear Salad

2 Bags of Romain Lettuce (I have also used Bok Choy)
2 Granny Smith Apples-Diced
2 Pears-Diced (better if on the green side)
1 Cup Red Grapes (optional)
1 Cup Craisins
8 oz Mozzarella Cheese (FF or Reduced fat depending on your cycle)
1 cup Cashews (cycle 3 only)
Mix above in a big bowl

2 T of Dijon Mustard
1/3 cup Lemon Juice
1/2 cup Sugar (Truvia)
1 T Poppy Seeds
1 tsp Salt
2/3 canola oil (I used olive oil) 
Whisk together and pour salad....Toss again before serving....I like to have it sit in the refrigerator to blend all the flavors)
